Take the chickens out 2/3 of the way through the cooking time, pull the meat from the chicken(s) and return the bones to the stock and finish the cooking. Then you can have your chicken and eat it too!
normally chicken stock is made with left over chicken bones…. so there wouldn’t be any meat on them
if, for whatever reason, you are making stock with whole chicken, yes, you can take the chicken and eat it, or make it into whatever you want.
