you cook the chicken in sesame oil, once cooked remove then take the garlic and ginger and put in pan for a few seconds it will brown quickly, then add the teriyaki sauce,sugar, rice wine vinegar, and orange peal that you mixed together in a bowl pour into pan add chicken and cook till thicken on a medium high heat. you can add corn starch to make the sauce thicker.</description>

2 tablespoons of sweet sherry 
1 tablespoon of brown sugar 
2 cloves of garlic 
½ teaspoon of minced ginger 
Peel the garlic and crush into a small bowl or jug. Add the minced ginger, brown sugar, sweet sherry and soy sauce. Stir to combine and pour over the chicken pieces. Marinate for 15 to 20 minutes. Preheat the oven to 180°C, 350°F or gas mark 4. Place the chicken pieces in an oven bag on a baking dish, or alternatively arrange the marinated chicken pieces on a greased roasting pan or baking dish. Bake for 45 minutes to 1 hour, or until the chicken is tender and cooked through. Serve with rice and fresh stir-fried vegetables.

6 tbsp kikkoman soy 
6 tbsp mirin (or sweet sherry) 
2 tbsp sake 
sugar to taste 
1 tbsp shishimi togarashi, japanese pepper mixture 
2 tbsp sesame seeds 


Preparation
Mix soy, mirin and sake, add sugar to taste. Mix until sugar is dissolved. 

Sprinkle chicken with shishimi and salt and saute until just about done. Pour 1 tbsp sauce over the chicken in the pan and leave. 

Put the rest of the sauce in a little pan and simmer until the sauce thickens slightly. Do this on low heat! 

Glaze chicken with thickened sauce and serve over rice with sesameseeds sprinkled on top. 

Tip: You could enhance flavour by adding ginger and/or garlic to sauce.</description>
