Ingredients:

2 eggs, beaten
1 cup flour
1cup dry italian bread crumbs (or 1/2 cup italian & 1/2 cup panko bread crumbs)
salt, pepper to taste (preferably kosher salt)
2 skinless, boneless chicken breast halves
3/4 (16 ounce) jar spaghetti sauce (or 1 qt. homemade sauce)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Directions:

Pound chicken breasts until the thick portion is equal to the rest of the breast.
Season bread crumbs with salt, pepper and granulated onion and garlic. (optional)
Toss chicken breasts in flour, then egg, then press firmly into the bread crumbs until they are coated.
Saute in vegetable oil or peanut oil approximately 3 minutes on each side, or until golden brown.
Finish in the oven at 350 degrees or until they is no pink inside.

In baking dish, rub some oil or spray non-stick pan coating, lightly cover with marinara sauce on bottom of pan. Place chicken breasts then cover with marinara sauce, and top with shredded mozzarella cheese.
Bake at 375 degrees until cheese is bubbly and lightly browned on top.
Serve with your favorite pasta of choice.
